Low-Glycaemic Protein Laddoos with Dates, Almonds & Cacao

These protein laddoos were created as a mindful alternative to overly sweet energy bites. They are made with whole ingredients, balanced proportions, and no refined sugar. Dates are used sparingly for binding, while almonds and protein powder form the base, making these laddoos dense, grounding, and satisfying rather than spiky and snacky. This recipe is designed for people who want nourishment, not sugar highs.


Ingredients

8 to 9 medium dates, depending on softness

1 cup raw almonds

5 tablespoons protein powder

1½ teaspoons unsweetened cacao powder

2 tablespoons desiccated coconut powder

1 to 2 tablespoons warm water, only if needed



For coating

Unsweetened cacao powder

Desiccated coconut powder

Finely crushed pistachios

Method

Lightly dry roast the almonds on low heat until aromatic. Let them cool completely and then pulse into a coarse flour. Do not over-process into butter.


Pit the dates. If they are firm, soak them in hot water for five minutes and drain fully. Blend the dates into a thick paste. Add the almond flour, protein powder, cacao powder, and desiccated coconut. Pulse until the mixture starts coming together into a thick dough. Add warm water one teaspoon at a time only if the mixture refuses to bind.


Let the mixture rest for eight to ten minutes so the protein powder can absorb moisture properly. Divide into roughly fifteen small portions and roll into firm laddoos.

Roll five laddoos in cacao powder, five in desiccated coconut, and five in crushed pistachios. Store in an airtight container in the refrigerator and consume within five to six days.


Notes & Variations

Pro tip: You can add up to 2 tablespoons of peanut butter to the mixture. This helps with binding and slightly increases the protein content while keeping the texture soft.


If you don’t want to use protein powder, you can replace the almonds with peanuts or roasted chana. The laddoos will still hold well and remain filling, though the flavour will change slightly.



How to eat

These laddoos are best enjoyed one at a time, ideally after a meal or with tea. Though made with wholesome ingredients, they are still calorie-dense and meant to be eaten mindfully.
