KALE CRISPS: My Journey to Healthier Snacking

As someone who’s always been a bit of a snack enthusiast (okay, a hogger, to be!), I’ve spent years indulging in not-so-healthy options. Chips, cookies, and sugary treats were my go-to. But when my husband suggested I try making kale chips, I decided it was time for a change.


Lucky for me, I didn’t have to go far to find the perfect ingredients. We’re fortunate to have our own permaculture farm, Meenabagh Farms, nestled in the beautiful hills of Ratnari, Shimla. With kale growing organically right there, I headed out to the fields and handpicked some fresh, vibrant leaves. There’s something deeply satisfying about plucking your own produce—knowing exactly where it comes from and how it’s been grown.

Back in the kitchen, I gave the kale a good wash in the sink, let the leaves dry, and then prepared them for their crispy transformation. A little olive oil, a sprinkle of pink Himalayan salt, and a dash of peri-peri seasoning were all I needed to give the kale the perfect flavour.


I decided to air-fry them—healthier and quicker than traditional frying. After preheating the air fryer for 5-10 minutes, I placed the kale leaves in the basket. Halfway through, I turned them over to ensure an even crisp. The result? Perfectly crunchy kale crisps that tasted as good as they looked.


Switching to healthier snacks doesn’t have to be boring or bland. It can be fun and delicious, especially when it involves fresh produce straight from the farm. And honestly, these kale crisps have become my new favourite snack—guilt-free and full of flavour!
